The Salted Lemon Market & Creamery opens for business in Springfield, Illinois

The Salted Lemon Market & Creamery, a member of the Three Twigs Group, opens its doors to the public on Wednesday, September 16. 

The third venture for husband and wife team Emily and Tim Lewis, The Salted Lemon Market & Creamery, is located next to its sister business, Biscuits & Brunch by Three Twigs at the corner of Iles and Chatham Road. 

“We are so excited to offer customers made-from-scratch soft serve ice cream, milkshakes, floats, and a range of toppings, using fresh, locally-sourced ingredients at The Salted Lemon,” said Emily, 26. 

Eight flavors will be served daily, including vegan options. Vanilla bean, midnight chocolate, and salted lemon will remain on the menu, while razzleberry, chocolate coffee, salt and pepper caramel, ube, and pumpkin spice are current seasonal options. All are gluten-free. Toppings include edible cookie dough, cookie crumble, chocolate ganache, and toasted marshmallow fluff. 

Emily said the goal at Three Twigs has always been to offer delicious food, made-from-scratch, using fresh locally sourced ingredients. "At The Salted Lemon, we are staying true to our roots by incorporating Kilgus Farmstead soft serve with some of our favorite local flavors. In addition to the creamery, we will be selling a range of local products in our market," said Emily. 

Customers can enjoy outdoor seating with plans to move patrons inside when the weather worsens. Opening hours will be from 11 am to 8 pm, Wednesday through Sunday. 

Emily and Tim are opening The Salted Lemon Market & Creamery with partner Clayton Rotherham. 

The Lewis' opened Three Twigs Bakery on Toronto Road in 2018 and successfully launched Biscuits & Brunch, a brunch restaurant featuring made-from-scratch biscuits, in May this year.
